I’m aware that this statement might cause an outrage from Oregon Hikers but I don’t like Dog Mountain.  I know, I know, it’s everyone’s favorite go to for a kick ass workout, vast views of the gorge and sweeping hills covered in wildflowers in the spring.  It’s true that you have to do this hike at least once. Recipe: Chocolate Orange Chia Pudding for One

When I first learned how to make chia pudding, I was obsessed.  I made it so often for a snack, breakfast and even dessert that after awhile I naturally got sick of it.  Well, it’s time to bring it back into the rotation because it is so good and so simple.  It always satisfies my sweet tooth, while also providing me with a sense of fullness when I snack.  I whipped this one up at lunchtime today, knowing that I’d be craving an afternoon chocolate fix.  It’s a good one!

Recipe: Teriyaki Salmon Rice Bowls

I’m a big fan of the poke bowl trend that has invaded Portland.  I love bowls, fish, fresh veggies and lots of flavor and these bowls deliver all of those things.  I wanted to try my hand at this at home but decided to go with cooked fish, rather than raw.  I am also a huge proponent of meal prep and batch cooking and although this recipe may seem lengthy, it will last me all week.  I stored the veggies, fish, rice and sauce in separate containers for easy assembly.  I have to say, this turned out to be restaurant quality!
