Recipe: Chocolate Orange Chia Pudding for One
When I first learned how to make chia pudding, I was obsessed. I made it so often for a snack, breakfast and even dessert that after awhile I naturally got sick of it. Well, it’s time to bring it back into the rotation because it is so good and so simple. It always satisfies my sweet tooth, while also providing me with a sense of fullness when I snack. I whipped this one up at lunchtime today, knowing that I’d be craving an afternoon chocolate fix. It’s a good one!
Chocolate Orange Chia Pudding for 1
Ingredients
- 3/4 cup light coconut milk
- 3 Tbsp chia seeds
- 2 Tbsp cacao or unsweetened cocoa powder
- 1 Tbsp maple syrup
- 1/2 tsp ground cinnamon
- pinch sea salt
- 1/2 tsp vanilla extract
- zest of one tangerine
- 1/2 tangerine, chopped
- 1 Tbsp toasted hazelnuts
Instructions:
In a mason jar, add all ingredients except tangerine and hazelnuts. Shake well to combine and place in fridge for at least 2 hours. Spoon into a bowl and top with fresh tangerine and toasted hazelnuts. Enjoy!
